Apple Cake with Blackberries
Nothing is better than a delicious fresh apple cake-. This recipe brings out that extra special out of a good apple pie with the addition of homemade blackberry jam. Served simple bathing in a blackberry coulis topped with leftover berries and sprinkled powdered sugar. If it still has a little heat to it, it just slides down like the best bakes you’ve ever tasted. The cake is very simple to make, but my method of doing the batter might be a little messy. Nevertheless this is the way to get the best result. You’ve got 50 minutes to clean the kitchen when the cake is baking to perfection. In the picture I have used the leftover berries that I didn’t use inside the cake. It won’t be enough for all 20 pieces of cake you get. Then you need to make more blackberry jam.

Sandefjord Smør (updated)
Переглядів 3,8 тис.7 років тому
A simple butter sauce that is used with different fish recipes in Norway. Sandefjord is a coastal city 2 hours from our capital Oslo and "smør" is translated to butter in English. You can use this sauce with salmon, cod and most known Scandinavian fish meals. It's similar to béarnaise or hollandaise sauce, but not as strong in spices. Just a simple mix of heavy cream and butter, with a touch of...
(Brown) Meatball Sauce
Переглядів 4027 років тому
Traditional sauce that goes with the meatballs. My version is a little spicier than a traditional one. I find it perfect with my recipe and the dark spicy sauce is well balanced. If you want extra flavor I could suggest using some bouillon cubes. Visit my website for more information. Norwegian Meatballs with sauce (Kjøttkaker)
Переглядів 14 тис.7 років тому
There are many recipes that Norwegians consider as a national dish. This might be the one many of the elderly would say was their favorite. We say you have to go home to mom's meatballs to feel at home in Norway. Every recipe is a little different, but consist of mostly the same ingredients. It's important for a Norwegian household to have their own special recipe. I've looked through my family...
Amazing Nachos by chefnorway
Переглядів 1007 років тому
I love nachos, and usually I go for nachos when I eat at a Mexican restaurant. I've worked out a special spice-mix, fried tortilla chips and a delicious look you won't find in many Mexican restaurants. I believe it’s a favorite among most, so trying this will bring some smiles from nacho lovers. This one has the crisp, the spice, the cheese and the colors to blow anyone’s mind.
Guacamole

Guacamole is very important to nachos. It doesn't have to be a boring dish, with just minced meat and cheese. The guacamole gives a spicy, cold dip that is necessary with nachos. Also very good with other chips and vegetables.
Pepper Sauce
Переглядів 1627 років тому
There’s no steak dinner without a strong pepper sauce. Actually you need meat to make a good pepper sauce. The tastes you get from the fried meat in the pan will bring an extra flavor to top this recipe. This sauce goes perfectly along with steak or any dark meat. Visit chefnorway.com/pepper-sauce/ for more information.
Raspberry Onions
Переглядів 1127 років тому
Raspberry Onions is a must have when I serve the love of my life. They are sweet and give the steak extra color and taste that blends perfectly with the peppery taste from the sauce. It’s very simple and you can freeze whatever you have left, and just heat up next time you make this meal. Visit chefnorway.com/?p=2919&preview=true for more info.
Thick Lefse

Lefse is one of the more famous Norwegian foods known around the world. Lefse is also quite different depending what town you visit, or even what home recipe you’re tasting. There’s sweet, salty, thin, thick, and lefse made with different basic ingredients like potatoes or flour. Served with lots of different fillings as well. This recipe will show the most basic and popular one. Thick lefse wi...
Carrot Cake

In baking, carrot is one of the best natural ingredients to make your bakes super moist and delicious. Carrot cake is no different, and I’m going to show you how to make one of the best carrot cakes you have ever tried. I’ve served this to many friends and colleagues the last weeks and they all make sure to get every last bit off their plate. Guarding it as it was their “precious”! I’ve yet to ...

Pacifical Dream is a great dessert with natural flavors. Sweet, sour and bitter combined perfectly with a great quality vanilla ice cream. Lots of vitamin C and great to eat when you’re having a cold, or just want it! ChefNorway's Italian Pizza Roll

It’s 2016 and I’ve had to come up with something new and creative. I wanted to make the very best pizza roll. Not the small boring ones, but a giant, filled with cheese top to bottom. Aged prosciutto ham, fresh herbs, tomatoes, mozzarella and a pizza dough made with nothing less than Italy’s own special pizza flour “tipo 0”. I’m not sure if you can handle this much cheese and goodness, but I’ll...
Raspberry lemon mousse

Raspberry Lemon Mousse is my special occasion dessert. It’s very tasty, quick to make, and looks amazing. It has that fireworks effect with sparkling colors when first looking at it, and when digging into it as well. Raspberry and lemon goes well together and finishes a delicious steak dinner like no other dessert. As with most of my recipes I don’t count calories when making delicious food, an...

Mozzarella, basil and tenderloin steak is on my favorite ingredients list. I’ve combined them all into a delicious extra special recipe for someone you would show some extra appreciation. It will take you close to 45 minutes to make and about 3 minutes to eat up! I’ve added my special steak sauce with brandy and fresh cut basil. Creamed and peppered to combine with the steak, cheese and of cour...
Oregano Cheese Sandwich

I make this recipe weekly. In Norway we usually have a late evening meal and it’s perfect for that. Of course if you want a delicious lunch go ahead as I believe it’s a delicious light meal. I recommend to try to bake my Norwegian loaf and use that with this recipe. If you don’t want to bake, you could use any kind of thick sliced white bread. Pay attention to cooking settings, and time. It’s a...

Does this recipe make 9 or 12 rolls? On the website it states 12 on top but later in the description it says to cut into 9 rolls. Thank you! We had a blast in Tromsö last year trying out as many different cinnamon rolls for breakfast as we could find. Hope these come anywhere close to it 🙂

Yes just like when I was a little girl, we just didn't use oatmeal and didn't squeeze out excess liquid, we just kept adding flour until we could shape into oblong balls. Added a pinch of allspice when mixing and added chopped up fresh pork in the centre. Very tasty. We called it Krub.

The “potato flour” you reserved in the bowl after squeezing the ground potatoes is high in pectin. Potato pectin is a better emulsifier than ones used commercially. It is also useful when making homemade jam or jelly.

I tasted cinnamon rolls in Norway and I wanted to eat them again, so I've just followed this recipe and I can say they're as delicious and smooth as the ones I tasted in Norway ! The only "weird" thing that happened to me, not a big deal though, was that some of the sugar of the filling seems to have got separated from it and flown down, because a caramelized layer was formed on the bottom of some rolls. I didn't use a mixer for the filling, but only a fork and my hands. Did maybe not all the sugar get well mixed? My family loved that added texture on the bottom anyway. Thanks a lot!
